Why we source this
Red dragon fruit (pitaya) is the engine of the smoothie bowl trend. The color alone moves product: cut open a fresh red dragon fruit and you get that impossible magenta flesh that Instagram built a category on. But most dragon fruit sold in the US is white-flesh, and most frozen dragon fruit is pre-puréed, losing the texture that makes bowls and toppings work.
We ship 1-inch chunks of red-flesh pitaya, flash-frozen in Vietnam where the fruit grows at commercial scale. The red variety (Hylocereus costaricensis) runs 2–3 Brix higher than white-flesh, with a cleaner, sweeter taste and the deep color that plating demands.
Juice bars blend whole chunks into pitaya bowls. Smoothie operators portion into per-drink bags. Dessert kitchens use the chunks for sorbet bases, yogurt parfaits, and garnish. The 10 kg box gives you about 280 x 2-oz smoothie portions, or roughly a week of medium-volume bowl service.

Common questions
Red-flesh dragon fruit (Hylocereus costaricensis, sometimes called red pitaya) is sweeter, more magenta, and higher in antioxidants than the more common white-flesh variety. The color is what makes it famous; the flavor is what keeps operators using it.
Chunks. Roughly 1-inch cubes, flash-frozen individually so they don't clump. Blend them whole, or thaw and use for plating and topping.
For bowls and smoothies, blend frozen (no thaw). For plated desserts or garnish, thaw overnight refrigerated. For sorbet, blend frozen into your base. For yogurt parfaits, let them partially thaw so they hold their shape.
Vietnam. Dragon fruit is a major commercial crop in southern Vietnam, and Vietnamese red pitaya runs consistently sweeter and more vibrantly colored than the Latin American supply.
24 months at 0°F (-18°C). Once thawed, 3–5 days refrigerated. Don't refreeze after thawing. The chunks will lose texture.
