Every case traces back to eight family farms across Bến Tre and Long An, two provinces in Vietnam's Mekong Delta where river silt and sun grow the yellow cane bartenders ask for by name. It runs sweeter, with a cleaner finish than the Caribbean strains most suppliers carry.
The farms cut at sunrise, and within four hours the stalks are trimmed, washed, and blast-frozen at -35°C. Freezing that fast locks the sugars at their peak and stops oxidation cold, so a case opened in Austin in July tastes like cane cut that morning in the Delta.
