We built this calculator to answer the single question we hear most from new operators: "is there actually money in fresh cane juice?" The honest answer is yes, at most price points and volumes, but the size of "yes" depends on a handful of inputs that are easy to fuzz without running the numbers.
Here's what the calculator takes on faith, and where your reality might diverge.
Default 70%. This is what our David's Cane Machine delivers on Vietnamese Yellow stalks when the operator passes each stalk 2–3 times through the rollers. Cheap imports typically hit 50–60%. An industrial triple-roller can reach 75%+. Set this to match your actual equipment.
The defaults are ballpark wholesale estimates. Real pricing depends on volume, ship-to location, and seasonal factors. For actual numbers, message us on WhatsApp. Pallet pricing is meaningfully discounted versus wholesale case orders.
This shows ingredient gross margin only. Your full P&L also includes labor per serving (typically $0.50–1.50), packaging ($0.10–0.30 for a cup and lid), and allocated rent/utilities. After those, net margin on fresh cane juice typically lands at 60–75%. Still among the strongest of any juice-bar menu item, but not the 85% that surface-level math suggests.
We assume zero waste in the calculator. Real operations lose 5–20% to oxidized juice, forgotten-thawed stalks, and over-pressing. Well-disciplined bars hit the calculator numbers. Sloppy ones don't. Build a waste buffer into your target margin if you're budgeting conservatively.

Operating costs (labor, rent, packaging) are not included. This is raw ingredient margin only. Wholesale prices are ballpark estimates; your actual quote may vary based on volume, ship-to location, and seasonal factors.
The math is accurate for the inputs you give it. Real-world margins vary by waste rate (oxidized juice, forgotten-thawed stalks), operator efficiency, and menu mix. Well-run operators hit the calculator numbers; less-disciplined ones lose 10–20% to waste. The presets reflect typical values we see across 200+ juice bar accounts.
