Three ways to spec

Pick the format that fits your bar's prep.

Some programs want the theater of pressing at the pass. Others want juice portioned in mise en place. Both get the same source.

Frozen stalks · 22 lb cases

Fresh-pressed in-bar

For bar programs that want the theater of pressing to order. Stalks thaw in your walk-in, press through a Micro Mini behind the bar or in prep, juice hits the glass the moment it's extracted.

1 kg bags · drums · IBC totes

Frozen pressed juice

Pre-pressed, single-ingredient cane juice, frozen at the press house. Thaw to prep temperature, portion into mise en place, use across service. The pragmatic choice for high-volume bars.

Reduction-ready

Cane syrup + tropical

Reduce fresh-pressed juice into a 2:1 syrup for mojitos, tiki builds, and highballs. Pair with our calamansi, passion fruit, and dragon fruit for a signature-cocktail tropical kit.

Cocktails built for cane

Four drinks the cane source defines.

Some cocktails are indifferent to ingredient provenance. These aren't. Fresh cane is the whole drink.

Havana, Cuba

Mojito

Fresh cane juice replaces simple syrup for a grassier, more complex backbone. The result is less cloying than the bar standard and tastes like what it's supposed to.

Brazil

Caipirinha

The national cocktail, reconsidered. Use fresh cane juice alongside cachaça to amplify terroir. A small change in ingredient source, a big change on the palate.

French Caribbean

Ti' Punch

Rhum agricole's defining serve. Fresh cane juice, rhum, a squeeze of lime, and a rock. If you've ever had it in Martinique, you know the cane source is the whole drink.

Contemporary

Cane-old fashioned

Cane syrup in place of demerara sugar. Works with bourbon, rye, or añejo rum. A signature twist that hits the glass with a cleaner, less toasted sweetness.

Why bartenders spec it

A flavor vocabulary simple syrup doesn't have.

01

Terroir, not sugar

Cane juice is a dialogue of sweetness, acid, and grass. A bar program that uses it for more than novelty opens a flavor vocabulary competitors aren't using.

02

Menu differentiation

'House-pressed cane' and 'rhum agricole-style' signal craft in a way 'simple syrup' never will. The menu language pays for the ingredient difference.

03

Prep math that works

One 22 lb case yields roughly 7.1 liters of pressed juice at 75% extraction. Frozen options replace the yield variance and let you run the cocktail menu without pressing on the fly.

FAQ

What your bar manager will ask.

Do you offer fresh or frozen cane for cocktail programs?

Both. Frozen stalks for bars that want to press in-house (the prep team thaws and presses to mise en place). Frozen pressed juice in 1 kg bags, 55-gallon drums, and 275-gallon IBC totes for high-volume bars that want the juice ready to portion.

What varieties of rum does your cane work with?

Vietnamese yellow cane pairs naturally with rhum agricole and cachaça-style profiles. The clean, grassy finish is exactly what these traditions are built on. It also works with traditional molasses-based rum as a cocktail ingredient alongside bitters and citrus.

How should we store the juice at the bar?

Frozen stalks: 0°F / −18°C, 12-month shelf life. Thawed stalks: refrigerated, use within 2–3 days. Frozen pressed juice: 2-year shelf life frozen, 7 days refrigerated after thawing. Treat it like fresh-pressed citrus once thawed.

What's the minimum order for cocktail bars?

Single 22 lb case orders are available for new-customer qualification. Wholesale pricing kicks in at 4 cases. Most cocktail programs run on a weekly or bi-weekly cadence sized to actual pour volume.

Do you also supply cocktail tropical juices?

Yes. 100% calamansi juice (perfect for Porn Star Martini and Filipino-inspired cocktails), yellow passion fruit juice with seeds, and red dragon fruit chunks. Same Austin warehouse, same frozen logistics.
