The supply challenge is why most bars don't run it. We fix that: 10 kg cases of pure calamansi juice, no fillers, portioned into 1 kg packs that hold perfectly in a standing freezer. How does calamansi compare to lime in cocktails?+

More tart (higher acid), more floral (orange blossom and kumquat aromatics), and more complex on the finish. Think lime with an added layer. Works best in drinks where you'd otherwise add an orange or orange bitters for complexity.

Can I use it 1:1 in place of lime?+

Yes. That's the easiest way to introduce it. Most drinks benefit from 0.75 oz calamansi vs 1 oz lime due to the higher acid, but a straight 1:1 swap works fine for first-tries.

What spirits does it pair best with?+

Gin (floral), white rum (tropical), tequila (cuts through agave), bourbon (rich sours), and mezcal (smoke-acid contrast). Works with almost anything.

Does it separate or oxidize when batched?+

Less than lime. Calamansi juice holds its flavor for 7–10 days refrigerated vs 2–3 days for fresh lime. Batched syrups last 2–3 weeks.
