Why calamansi
Most juice bar menus are some version of the same 8 drinks. Calamansi juice is a small addition that changes the whole menu shape. It's the drink that lands differently for Filipino American customers (who grew up with it), curious customers (who've never had a citrus this complex), and health-conscious customers (who want something tart without sugar).
Portion is easy: 4–6 oz per glass, mixed with simple syrup to the customer's spec. Or blend with sugarcane juice (our own Vietnamese yellow cane works beautifully) for a sweet-tart house drink. Or blend with coconut water for a post-workout electrolyte drink.
A 10 kg case covers 250–330 standard servings. For most juice bars, that's 2–3 weeks of service as a featured menu item. Add a calamansi-forward signature drink and you've built a reason customers come back specifically for that menu item.
