Durian is the most polarizing fruit in the culinary world, and one of the most profitable SKUs a foodservice operation can run. American ice cream makers, Asian bakeries, bubble tea shops, and high-end restaurants have all built menus around it. But actually sourcing, handling, and using durian at commercial volume is a different game than most operators realize.

What Durian Actually Is

Durian (Durio zibethinus) is a large, spiky tropical fruit native to Southeast Asia, grown primarily in Thailand, Malaysia, Vietnam, and the Philippines. Each fruit weighs 1 to 3 kilograms and contains several seed pods filled with pale yellow to deep gold pulp. The flavor is rich, custardy, and unmistakable, with notes of cream, caramel, and a sulfuric complexity that either intrigues or repels first-timers.

The "king of fruits" reputation in Southeast Asia is earned. A peak-season Monthong durian sells for $40 to $60 per fruit at premium Bangkok markets. Musang King from Malaysia can go for $80 or more. In the US, fresh durian is often $15 to $25 per pound at specialty Asian grocers, making it one of the most expensive fresh fruits you can buy.

The Four Durian Varieties That Matter

Of the hundreds of durian cultivars grown commercially, four dominate global trade:

Monthong (Thailand)

Also called Golden Pillow. The most widely exported variety. Mild, sweet, custardy, with the least polarizing flavor of any durian. High sugar content, consistent pulp color, and strong shelf stability make it the default for commercial ice cream, bakery, and bubble tea operations. The trophy variety. Intense, bittersweet, with deep golden pulp and an almost alcoholic complexity on the finish. Retails for 3 to 5 times the price of Monthong. Used in premium ice creams, dessert tasting menus, and durian-forward restaurants.

Red Prawn (Malaysia)

Sweet, slightly bitter, with a distinctive reddish-orange pulp. Gaining popularity in specialty markets. Less shelf stable than Monthong.

For most operators, Monthong is the right answer: it gives you durian flavor that reads to American palates, it's economically viable at commercial volumes, and the supply chain is more reliable. Specialty varieties like Musang King are for operators building an identity around durian expertise.

Fresh vs Frozen: Why Commercial Kitchens Run Frozen

Fresh durian is seasonal (May through August in Southeast Asia), perishable (3 to 5 days once cut), and extremely price-volatile. For a restaurant running durian as a recurring menu item, fresh simply doesn't work at scale.

Bakery and pastry. Thawed pulp is pipeable directly for durian puffs and cream rolls. For tarts and cheesecakes, fold pulp into the base at 15 to 20% by weight. Monthong's aromatic compounds are stable up to 180°C (355°F), so standard bake temperatures work without flavor loss.

  • Variety. Monthong is the commercial standard. Anything sold as generic "durian pulp" without a named variety is usually lower-grade hybrid material.
  • Deseeded and de-fibered. Professional-grade pulp should arrive ready to use. Removing seeds and membrane in-house is a labor cost most kitchens don't want.
  • Flash-frozen at origin. "Frozen" isn't the same as flash-frozen. Ask about freeze method and timing relative to harvest.
  • Pack format. 1 kg vacuum packs are the commercial standard. They portion well and refreeze safely within 24 hours of opening.
  • Frozen delivery. If the pulp partially thaws in transit, texture breaks permanently. Ship via frozen freight, never dry ground.

How do I handle the smell in a shared kitchen?
